Focaccia
Amazingly easy Focaccia to make. Its always a hit. I make mine with Spelt Flour (I haven't yet figured out a gluten free version).

Ingredients:

2 cups lukewarm water

2 teaspoons yeast

mix together with a fork

mix in 2 cups of flour (spelt or white)

add 1 teaspoon salt

mix in another 2 cups of flour

(mixture wants to be a bit sloppy)

Method:

Rise for 1 hour (I do this in the oven - turn on oven for 3 mins on a super low heat then turn it off and put the dough in to rise) Transfer to a well oiled tin. Drizzle some olive oil on top and sprinkle with rock salt. Bake for 20 mins on 180 celcius or 360 degrees Fahrenheit
