Mushroom Pate
Ingredients:
1 lb (450g) Button Mushrooms (any mushies really)
2 oz (50g) Butter
Clove of Garlic
Salt & Pepper to season
Optional:
2 Tsp of Brandy/Wine/Sherry ... (*Note to one self... brother is a member of AA and has been for 20 odd years, pretend he hates mushrooms or my cooking and add alcohol or don't invite him or gobble it up before he arrives for dinner BUT don't feed it to him!!!)
Onions/Shallots
Herbs and spices, whatever ya got or like.
(The idea is to experiment)
Method:
In a fry pan add: butter, onion and garlic and cook until tender add: mushrooms add: brandy, salt & pepper to taste, herbs etc. Cook slowly and allow the juices from the mushroom and brandy to evaporate. Be patient it may take longer than you expect. Puree in a blender or processor. On pulse for a couple of spins, take the lid of and wipe the bowl and pulse again. Until you get a smooth spreadable paste. About 3 or 4 pulses. compress/pack down into a small dish/bowl and leave to cool. An hour or more. Great to take fresh to a dinner party.
