Mushroom Pate

Cut up mushies, onions and garlic. *Smaller the better for the processor.
ingredients
1 lb (450g) Button Mushrooms (any mushies really)
2 oz (50g) Butter Clove of Garlic
Salt & Pepper to season Optional
2 Tsp of Brandy/Wine/Sherry
Onions/Shallots Herbs and spices, whatever ya got or like. (The idea is to experiment)
Method
In a fry pan add: butter, onion and garlic and cook until tender add: mushrooms add: brandy, salt & pepper to taste, herbs etc. Cook slowly and allow the juices from the mushroom and brandy to evaporate. Be patient it may take longer than you expect. Puree in a blender or processor. On pulse for a couple of spins, take the lid of and wipe the bowl and pulse again. Until you get a smooth spreadable paste. About 3 or 4 pulses. compress/pack down into a small dish/bowl and leave to cool. An hour or more. Great to take fresh to a dinner party.
