Pizza Base

Pizza Dough, easy to make takes 2 hours to rise.

ingredients

2 1/2 c flour (I use spelt flour)
1/2 t salt
1/2 t yeast
1/2 t xantham gum (you only need this if you use spelt. lave this out if using ordinary wheat flour)
3/4 c lukewarm water
3 T olive oil

Use anything you like. I use mushrooms, onion rings, mozarella cheese, olives etc...
sauce: garlic & a tin of tomatoes, fresh herbs if you have them, dried herbs if you don't, pepper and salt to taste.

Method

Mix all the dry ingredients together, then add the lukewarm water and the olive oil.
Kneed it and work the dough for 4-5 minutes.
Put the dough into an oiled bowl and cover, leave to rise for 2 hours.

For the tomato sauce for the base I simply cut some garlic and then add a tin of tomatoes to the frying pan. Cook it for a couple of minutes, add fresh herbs if you have them, dried herbs if you don't, pepper and salt to taste. It tastes million times nicer than store bought tomato sauce for a base
