Rye Bread
This is honestly a great easy recipe. It's based on my gluten free bread recipe and has 1/2 gluten free flour and 1/2 rye so it is still a low gluten option. Once you get all the ingredients together and have made it a couple of times its a breeze and a pleasure and it is truly so yummy!

Ingredients:

  • 350ml warm water
  • 100g millet flour
  • 100g buckwheat flour
  • 200g rye
  • 2 tbsp (T) freshly ground linseed
  • 1 tsp (t) salt
  • 3/4 t Xanthan Gum
  • 2 t baking powder (gluten free if you have it)
  • 1 T sugar
  • 2 t yeast
  • 3-4 t caraway seads
  • 1-2 T molasses

Method:

measure out the 350ml warm water and add the sugar and yeast. Put it somewhere warm if you can for a minute. mix all of the dry ingredients in a bowl add the yeasty water and gently mix the dough together. It doesn't need hard kneading. raise the bread for an hour* bake the bread for 45-50 minutes on 180-200 °C *I rise my bread by switching the oven on for 2 minutes on super low heat, then switch it off. This is enough warmth for rising the bread. *I recently raised a rye bread for about 6 hours because of timing issues, and it ended up beeing absolutely amazing. Extra soft and fluffy. So rise for 1 hour minimum but if you have more time, go for it. Whatever works for you.
