block of tofu
An amazing vegan alternative to scrambled eggs. Great to set you up for the day maybe in combination with some baked beans.

Ingredients:

1 red onion finely chopped
2 cloves of garlic
1/2-1 tbl grated ginger
1 block of tofu (best is a medium density)
1/4 - 1/2 tsp cumin (freshly ground if you can)
1 tsp turmeric
salt & pepper
2-3 splashes of tamari (soy sauce)
1 tbsp of tomato puree
fresh mushrooms preferably some phoenix and some button mushrooms otherwise just button will do fine
1 fresh tomato chopped (optional)

Method:

Fry up red onion until almost caramelized then add garlic and ginger fry for another minute. Then add the other ingredients, cook for a further 4 minutes adding the tomato in the last minute serve on hot toast with baked beans or something, awesome vegan breakfast alternative to eggs.
